I used these olds with plastic handle/sticks but you can use whatever set up you have, including old school wooden popsicle sticks. Work with whatever you have

Is Canada Day becoming the new 4/20? Since it’s legal here now, the need to celebrate on the downlow has kind of disappeared and is there a better day to celebrate Canada’s ground breaking legalization of recreational cannabis? I think not.

So, usually, I might make these with cannabis infused cream but I am not in the mood to bother with math and sous vide because my brain does not work anymore, thanks to this godforsaken pandemic. I want to make cannabis infused Iced Pops for Canada Day and I want it to be easy. Instead of using infused cream, I am using the strongest THC oil I own so that I don’t have to use much of it.

You just have to decide what dosage you would like, get your strongest THC oil and just add  5 or 10mg of THC to each popsicle when you add the strawberry layer – just drip it right on top of the berries. You will want to use a strong oil for this so you don’t have to use much – at least a 20mg per ml oil or stronger because you don’t want to use more than half a ml per popsicle as it can affect the taste and texture. I have a medicated oil that is 25mg THC/ml so for my 5mg THC CannaPops, I only have to use .25ml of the oil in each mold.

***This should go without saying but I hope it is clear that if you have children in your home, you have to take extra care to make sure that these are kept well away from them. These are for adults only, make sure you label them to make sure that nobody who doesn’t want some THCcicles doesn’t eat them by mistake.

Oh Canada Pops

if you can’t find actual molds, you can use paper cups and wooden sticks from the dollar store – try not to make them too big if you go that route because they will be too hard to eat and you won’t get as many out of the recipe.

1 cup 18% cream

1/4 cup Greek Yogurt

3 tbls Maple Syrup

1 tsp pure vanilla extract

2 dozen ripe Ontario Strawberries

1 tsp maple syrup

THC oil

popsicle sticks

Mix the cream, yogurt, 3 tbls maple syrup and vanilla really well – I used my bullet but a blender would be great. Set aside. You end up with just over 1 1/4 cup of cream mixture so the number of pops you get will be determined by the size of your molds.

Puree the strawberries and mix in the maple syrup.

Pour the cream/yogurt mixture into popsicle molds until they are just a hair under half full. Put the molds in the freezer for about 30 minutes until the cream is set.

Pour a thin layer of the strawberry mixture in each mold, drip on THC oil to achieve desired dosage – I would recommend not adding more than .5ml – , lightly sort of mix it in with a skewer or something similar and return to the freezer for another 20 to 30 minutes, minimum, to start to freeze that layer.

Take the molds out of the freezer and fill to the top with the cream/yogurt and add the sticks in. Return them to the freezer one last time and let them freeze until they are good and solid, at least 4 or 5 hours.
