The tagline at Bardō says it all.

Good ingredients matter. And that is why Hamiltons’ Bardō (pronounced Bar-dough) knew why they needed to continue doing what they were so good at.

As part of an initiative to strengthen and grow their brand Pearle Hospitality did something a lot of restaurants are hesitant to do. They took a popular restaurant and renovated the space. But kept locals happy by continuing to provide the same culinary experience. Formerly Earth to Table: Bread Bar, the new moniker playfully highlights their commitment and history of quality ingredients.

With the recent renovation of their Locke Street location, they go from a darker, tightly packed interior to a gorgeous, fresh open concept that gives diners a view of the kitchen and bar from every angle. The pops of teal and orange against bright white walls provide lightness to the space.

Don’t sleep on the Brussels at Bardō

Change is good especially when you look at the menu and still see your local favorites. No dining experience goes by without trying their Crispy Brussels Sprouts. Tossed with a mysterious umami sauce, chili and slices of apples you are tempted to order another plate.

The heirloom beet salad is refreshing with a tang of goat cheese, sweet mandarin orange and rich tahini yogurt.

The umami sauce makes an appearance again in what is one of my favourite burgers this year. Tender and juicy patty, mushrooms, pickled onions, truffle aioli and Parm crisp. This results in a delicious messy handful worth every last napkin. Pair it with a side of the daily-created loaded fries.

Known for their amazing stone-baked pizza, Princess Pickle is also a local favourite that remained on the menu. White sauce, mozzarella, chicken sweet pickle, dill, garlic, breadcrumbs, chili flakes and ranch dressing combine to create an incredibly unique pie. Don’t see an old favourite on the menu? If you have room for a cocktail or a dessert there are many fan favorites and new additions to choose from. The Lemonjade (yes that is spelled right) combines Tequila, mint, lime, lemonade and a tonic that reminds you of the beach. Desserts like the Cookie Butter Cheesecake will satisfy all the sweet tooths in the group.

The Future is Delicious.

With plans for expansion starting in Elora in 2025, Bardō will continue to provide something for everyone. With rotating specials and dishes created with seasonal and locally sourced produce the legacies of Bread Bar continue to live up to their ethos: good ingredients matter. And while you wait for them to open up near you, take a trip to any of their current locations in Hamilton (Locke Street, James Street North) and Guelph. It won’t be your last.
