You don’t have to be a vegetarian to love these bundles of spicy, cauliflower goodness. To be honest, I prefer oven baked cauliflower over oven baked chicken wings anyway and I don’t really like deep frying in my tiny kitchen. They are easy to make, delicious to eat and whether you split the dish between four of you or make it part of a larger infused menu and stretch it out to serve 8 people 5mgs of THC each, is up to you.
Classic, Buffalo wing Franks Red Hot style sauce is the perfect vehicle to use up some of that canna butter you have in the fridge too – it has so much flavour and heat that even if some of your friends don’t care for the taste of weedy butter, the flavour is overpowered by the Franks.
Cauliflower “Wings” with Infused Hot Sauce and Blue Cheese Dip
makes 4 servings of 10mg TCH per serving
1 head cauliflower, broken up into florets
1/2 cup buttermilk
1/2 cup water
1 cup AP flour
1 clove minced garlic
1 tsp kosher salt
freshly ground black pepper
Preheat the oven to 450F
Position a rack on the lowest rung and put your parchment line baking tray in the oven to preheat as well.
Meanwhile, whisk the buttermilk, water, flour, garlic, salt and a few grinds of pepper in a big bowl that can hold all of the cauliflower. Throw in the cauliflower florets and toss them around (or use a big silicone spatula) in the batter until they are evenly coated.
Take the hot baking tray out of the oven and spray some oil onto it before tipping the battered cauliflower out onto it. It will give a lovely sizzle as you shake it out and spread the florets out so the can have some space around them to allow for optimum crispness.
Bake for 18 minutes.
Take them out and either toss them in a big bowl with your sauce of choice or drizzle it over the cauliflower straight on the pan and stir them around to coat them in the sauce and the return the pan to the bottom rack and cook for five more minutes. Take the pan back out, plate and serve.
Wing Sauce – the total recipe has approx 40 mg THC so 4 servings of 10mg THC
8 tbls Franks Red Hot Sauce
3 Tbls infused canna butter
3 tbls butter
1 1/2 tbls white vinegar
1 clove garlic, minced
1/2 tsp Worcestershire sauce
Heat all the ingredients in a small pot over med low heat until the butter is melted, taste, adjust for salt and keep warm.
*as always, the recipe assumes you are using my ratios to make your canna butter but if you have made it stronger or weaker, adjust the amount of infused butter accordingly as long as you end up with a total of 6 tbls of butter and 40mg of THC
Blue Cheese Dip
1/4 cup greek yogurt
2 tbls mayo
1 tbls buttermilk
1 tbls white balsamic vinegar
pinch kosher salt
1/4 cup crumbled blue cheese
Mix all the ingredients together before folding in the cheese.
