Tonight we light the third candle. Hanukkah is in full swing.  Like many Jewish families across the GTA, the next few nights will be filled with family, songs and of course, food. A Jewish celebration is not a celebration unless it is accompanied by plenty of food. And the tasty treats served at Hanukkah are so delicious (if not a little unhealthy) but hey, it only lasts for eight nights.

I am horrible at making my own sufganiyot (jelly filled donuts) but do love to spend time in the kitchen, with the kids, making latkes (potato pancakes). Below is the recipe, from the cookbook Second Helpings Please, that we have been using since I was a little girl.

Potato Latkes

6 potatoes, peeled and grated
1 small onion, grated
3 eggs
1 tsp salt
¼ tsp pepper
¼ cup flour
1 Tbsp oil
2 tsp baking powder
(Oil for frying)

Grate potatoes and drain well.

**You can put the onions and potatoes through the food processor if you wish.

Blend in remaining ingredients.

Heat oil in a frying pan and carefully drop the mixture, from a spoon, into hot oil.

Brown on both sides, turning only once.

Yield: about 2 dozen latkes of 3” diameter, depending on the size of the potatoes.
